Recipe -
(Makes 12, easily halves or doubles!)
Ingredients:
250 grams Cup-4-Cup Gluten Free Flour
220 grams sugar
116 grams Cannabis Infused Butter* (unsalted, *1,200mg THC)
116 grams organic buttermilk
140 grams plain Greek yogurt
2 large organic eggs
3 tsp vanilla extract
1 tsp Bragg’s Apple Cider Vinegar
1/2 tsp maple extract
1/4 tsp almond extract
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/4 tsp ground organic cinnamon
1/8-1/4 tsp espresso powder
1/8-1/16 tsp ground organic ginger
For muffin pan prep:
116 grams salted butter
100 grams King Arthur Baking Almond Flour
Method:
Bring eggs, butter, yogurt, and buttermilk to room temperature, 65°. (Measure butter with meat-thermometer and wait until it warms to 65° before creaming with sugar for best emulsion).
While that warms:
Grind and sift sugar; Weigh and sift together flour, raising agents, and spices; Stir extracts and ACV into yogurt; line muffins tin(s) with salted butter and dust generously with almond flour.
When butter reaches 65°;
Cream with sugar; Fold in eggs one at a time; Fold in yogurt (mixed with ACV & extracts); Lightly, briefly, whisk in buttermilk; Sift flour (mixed with raising agents & dry ingredients) on top in one addition; Fold, DON’T STIR, until fully combined and fluffy, - after noticeable clumps of flour have dissolved but before the batter loses volume and starts to stretch ; spoon into prepared pans by filling each muffin cup 3/4 of the way full (prep a spare pan for extra batter; 3/4-full cups of a consistent size will yield a better bake than overfilling). *Divide 1,200 by total amount of muffins to determine approximate amount of THC in each*.
Let prepared tins rest for 35 minutes.
While batter rests;
Pre-Heat Oven to 375°F; Sprinkle 1/2 - 1 tsp of granulated sugar on the top of each unbaked muffin.
When 35 minutes of resting is up;
Place muffin pan(s) in the middle of the center rack and bake for 25-30 minutes. (Bake times vary based on oven temperature, bakeware, and batter consistency, along with altitude. Look for a medium to lightly browned top with a slightly darkening edge, and remove from oven before any spot appears blackened. A toothpick inserted into the center of a muffin will come out clean when fully baked).
Remove from oven; set timer for 5 minutes; gently loosen edges of each muffin away from tin while cooling; allow to cool for a full five minutes before removing from pans and placing on cooling rack or platter; cool to room temperature before sealing and storing.
Muffins will be shelf stable for three days, will store well in the refrigerator for seven days max and will freeze and thaw well for up to six months. (Remove from freezer and bring to room temperature to thaw for best results).
